>Fideuá with vegetables

INGREDIENTS:
– 1 cup of parsley leaves
– 200 gr. of eggplant (cut into pieces and unpeeled)
– 200 gr. of natural tomatoes (cut into pieces)
– 100 gr. onion (to quarter)
– 2 garlic cloves
– 50 gr. of extra virgin olive oil
– 250 gr. from noodles to fideuá
– 100 gr. of white wine
– 600 gr. of broth of vegetables or meat “Aneto”
– 1 pinch of sugar
– Salt and ground black pepper
– A pinch of food coloring
– A few strands of saffron

PREPARATION:
– We put in the glass of the Thermomix the parsley and a pinch of salt; we chopped for 10 seconds at speed 7. We set aside.
– Without washing the glass, we introduce the eggplant and we cut for 6 seconds at speed 4. We put it in a colander, the salt and let it drain on a container.
– Without washing the glass, we introduce the tomatoes and we cut for 5 seconds at speed 4. We set aside.
– Without washing the glass, we put the onion, the two cloves of garlic and the oil; we grind for 5 seconds at speed 5.
– We program 5 minutes, temperature 100º, speed 1.
– We rinse the eggplant, drain the water and dry it on a kitchen paper.
– Add the eggplant and program 5 minutes, temperature 100º, turn left, speed spoon.
– Incorporate the tomato, a teaspoon of salt and another of sugar. We program 4 minutes, temperature 100º, turn left, speed spoon.
– We add the noodles and we program 3 minutes, temperature 100º, turn to the left, speed spoon.
– We incorporate the wine and we program 4 minutes, temperature 100º, turn to the left, speed spoon. Without goblet.
– Add the broth, the coloring and the saffron; we program 7-9 minutes (depending on the manufacturer), temperature 100º, left turn, spoon speed.
– Pour in the container in which we are going to serve and sprinkle the reserved parsley.
– We mix and serve immediately.
